With funding from the Governments of Canada and British Columbia, the bakery has successfully implemented a cutting-edge traceability software system that enhances their ability to track ingredients and products throughout their production process.

This will be particularly crucial in case of recall, as the software allows us to go to a level of detail much higher than we were previously able to achieve. For instance, for each baguette received by a customer, we can tell which bag of flour was used and recall all the baguettes from the same bag of flour instead of having to recall the entire production for that day.”
